In a microwave safe bowl take the chopped veggies turmeric and a pinch of salt and cook for 5 minutes .
Clean the soak dal and mix rest of the tumeric powder and a little salt . Pressure cook for 5 minutes after the first whistle to get soft dal.
In a wok heat the oil . Add panch phutan and hing. Let them crackle. Add chopped garlic and fry till golden.
Mix Onion, Curry leaves, Chili and fry till the Onion translucent.
Add chopped tomatoes , cooked veggies and Ambula. Cook for 2 minutes.
Mix the cooked dal now. Adjust the salt and water and bring to boil.
P.S. Ambula is prepared from raw mangoes. Peel the skin and cut into half. Add salt and turmeric. Dry in the sun till all water evaporate. Store them . Remain years long as such. Salt is the preservative here.
